S'Moyas (aka Almond Rocha Bars)

1 cup butter
1 cup brown sugar
Sliced almonds
Honey Graham Waffers
4 "large" chocolate bars (ie: Hershey's milk chocolate)
Heated oven to 200*F

Spread the waffers on a cookie sheet.
Melt the butter on low-medium heat in a saucepan.
Whisk in the brown sugar. Continuously whisking until it starts bubbling. Whisk for 5 more minutes. Caramel should start coming away from the pot as you whisk.
Pour the caramel over the waffers.
Break up the chocolate bars and distribute evenly over the surface.
Put it in the oven for 3 or 4 minutes to get the chocolate soft.
When the chocolate is soft, spread it across the top.
Sprinkle almonds.

Enjoy!

APRICOT CANDY

1-1/2 c. dried apricots, ground
2 c. shredded coconut
2/3 c. honey (not sure about this measurement, try 1/3 cup first)
Confectioners' sugar

Combine apricots and coconut. Add honey and blend well.
Shape into small balls and roll in confectioners' sugar.
Let stand until firm. Store in refrigerator.

Or, you can press the whole concoction into a cookie sheet,
refrigerate until firm and then slice it in little squares -confectioners
sugar optional.
